One thing that amazes me about Mexican restaurants back at home is that they focus heavily on dinner. It's difficult to find a Mexican breakfast in New Zealand, or really any country I've travelled to outside of Mexico. Yet breakfast is one of the most important, delicious and diverse meals of the day here. Much more revered than dinner. Smokey hot memelitas off the comal with a fist full of fresh cheese; pollo wrapped in soft tortillas and doused in enchilada mole sauce of bitter chocolate and chiles; and let's not forget chilaquiles- pictures here – the ultimate fry up of crispy tortilla chops, spicy salsa rojo with fresh cheese and herbs. Mexican breakfasts are the best breakfasts of anywhere I've ever eaten, and totally underrated outside of Mexico
