Meet Raicilla, your new favourite margarita ingredient! ? Pronounced rye-see-ah this distilled agave-based spirit shares a lot in common with tequila & mezcal, and is well worth a try! ? Here's a few facts about my new favourite:? ? – It comes from here, the state of Jalisco, just like Tequila does. – The piña is roasted like mezcal, rather than steamed like tequila – so it has some of mezcal's lovely smokiness – One of the two epicenters of raicilla production is the coast south of Puerto Vallerta, so right here where I am! -The word Raicilla means 'little root', this is because when tax collectors came, locals lied, saying it was not made from the agave's piña like mezcal, but instwad it was from the “roots” of the agave plant ( which is the same thing)? -? This cocktail pictured is a delicious combo of local raicilla with coconut water & ginger.?
