is pretty special because of the beaches, the weather, the laid back attitude and incredible jungle & wildlife – but apparently no amount of living in other parts of Mexico will shake out my intense love for Oaxacan food. Once we are more settled into life here, I look forward to vacationing back in my precious other Mexican home of but in the mean time, I found some tasty mole to ease the cravings!
A typical breakfast, Oaxacan style: enchiladas with eggs, rich mole negro and crumbled queso fresco, memelitas, a fragrant toasted corn tortilla smokey fresh of the comal with black beans and local cheese, served up with a chocolate de agua: locally produced chocolate (in the lands where chocolate originates from) – deep and fruity, foamed up with hot water. Breakfast heaven! ?
